This International Standard specifies a reference method for the determination of the nitrogen content of meat and meat products¹⁾.

Kjeldahl method of acid digestion using copper sulphate as catalyst, solution made alkaline, liberated ammonia distilled into boric acid and titrated with hydrochloric acid.
